Exciting Times

I’m currently in the process of moving too a shiny new self hosted site. If you’re an email subscriber here you should be migrated otherwise i’ll be putting out links and such on Twitter and updating here when the process is complete. Its been quite stressful so far but I think I’m getting there!

Meal Plan Monday – w/c 31/8/2015

As predicted we didn’t stick to rigidly to the meal plan for this past week because we had guests. The first few days went as expected but on Wednesday we had chips as opposed to a stirfry, on Thursday & Friday we ate lunch out & skipped dinner. Not very organised or healthy but hey ho it was the Fringe Festival!


On Saturday I made meatballs instead of Matts burgers and on Sunday we had the thai curry from my meal plan.

This week things will go to plan. Matt is back in work as of tomorrow and we have nothing exciting organised for this week. Just lots of housework, baby clubs, uni assignments – bleugh!

Monday – Egg Fried Rice with Veg & Prawns

Tuesday – Some kind of mexican pork based meal

Wednesday – Veggie Paella

Thursday – Pizza

Friday – Mackerel with Veg

Saturday – Spinach & Ricotta Cannelloni

Sunday – Undecided. Probably a roast, if Matt isn’t working.

In terms of lunches this week I am more prepared with ravioli, salad stuff and soup all available should Luisa decide to nap at a lunchy hour. Going forward we’re also trying to cut back on the rubbish to try and shed a few lbs. Before I was pregnant I followed Slimming World with good results so will be implementing some of their principles again.

Meal Plan Monday – w/c 24/8/15

So last weeks meal plan couldn’t have been more of a failure. We had the Mac & Cheese on Monday but Matt got an awful bug which Luisa then caught so I had my hands full (mostly of vomit) The only other meal that went as expected was our Sunday dinner of roast beef. YUM I used a Jamie Oliver recipe, it was great.

I mostly ate by myself this past week & had to shop in the local co-op as I don’t drive so my meal plan went out the window. Here’s a look at what I had.

Now that the patients are almost back to normal I’m hoping this week will go a bit smoother. We have Matts parents coming from Belfast on Wednesday so I’m not planning a full weeks meals as I’m not sure when we’ll be in the flat. Also they aren’t too fussed on our semi veggie state so this is how it looks so far…

Monday – Pesto Pasta

Tuesday – Tuna Steaks with Risotto

Wednesday – Veggie Stirfry

Thursday – BBQ chicken drumsticks

Friday – Takeaway / out for dinner

Saturday – Homemade Burgers (Matts specialty)

Sunday – Thai Veggie Curry

One thing I am struggling with meal wise is what to eat for my lunch. I need something quick to prepare or that can be made in advance as I’m home alone with Luisa Monday – Friday. I usually have breakfast about 10am and skip lunch, snacking in the afternoon. I really want to knock that bad habit on the head so let me know if you’ve any ideas please :)
